Dosa Pizza


 Most of us love pizza. Preparing regular pizza is a bit time consuming and you need a lot of patience . This dosa-pizza is a new, completely different recipe which is very easy to make and preparation time is very less. It tastes so good and its obvious that kids will love it. Its much healthier than the usual pizza.

The most important thing for making Dosa Pizza is the pizza sauce.So,lets see how to prepare this pizza sauce first.


Ingredients for pizza sauce :  2 persons

Tomatoes              -  4 nos
Onion                    -  2 nos (finely diced and minced)
Fresh cream          -  3 table spoons
Dried Oregano      -  1 table spoon
Garlic                    -  2 cloves (peeled and minced)
Black pepper         - 1 pinch
Basil                      -1 pinch
Sugar                    - 1 teaspoon
Oil                        - 2 table spoons
Salt                       - according to taste


 Lets check out the method of preparation!

In a pan with boiling water,add tomatoes. After 10 minutes, remove the tomato skin and grate into a pulp.In a heavy bottomed pan, add oil and let it heat. Now add onions,and saute until slightly translucent.Add garlic and saute for about a minute.Now add the tomato puree quickly to the mix.Stir well. Season with pepper,oregano and fresh basil. Add salt according to your taste.
 Add sugar finally.(this is optional).Keep it on a low flame and keep stirring often. (Do this for about 10 minutes.)

Okay!!lets see the ingredients for Dosa - Pizza

Dosa Batter           - 1 cup
Pizza Sauce           - 1 cup
Olive                     - 2 table spoons
Jalapenos              - few
Tomatoes              - 2 nos(finely chopped)
Onion                   - 2 nos(finely chopped)
Boiled corn           - 1 cup
Mozzarella cheese - 1/2 cup and 1/2 cup of grated cheese.
Oil                         - 2 table spoons
Salt                        - according to taste.


Preparation :
Heat tava and spread the dosa batter.(It should be like a big oothapam).Always keep in low flame. Now spread  pizza sauce all over the dosa batter.Now cover this layer of pizza sauce with cheese.Add all the vegetables and seasonings mentioned above. You can add a pinch of salt.Sprinkle grated cheese.Now add oil . (You should be real quick when you do these steps )
Keep the semi-cooked dosa in microwave oven and cook for about 3- minutes.
If not, you can simply cover the semi-cooked dosa with a lid and keep it in low flame and cook for about 5 minutes.

What should a parent do when class 12 board exam results are out?


      Now that class 12 exams are over, I observe students are bit relieved but parents are still nervous. I seriously hope this article will help the parents of class 12 students. 

Even before telling you what you guys should do,I want to remind you,your child's potential

You might have observed your son's or daughter's performance till the "millionth pre-final exams". If your son scored 60% till pre-finals you can't expect him to get 80% in the finals. So be prepared. NO, no magic is gonna happen. Disappointments lead to frustrations.This results in entire family getting upset. 

Just because a random relative's son scored 1180/1200 in last year board exam,it doesn't mean your son/daughter should also score like crazy!! So don't compare. No two students have same capacity and no two students have same environmental impact.   

In case your son didn't score well,its so obvious that he is interested in something else!!!
It doesn't mean he is not interested in studies,it means he is not interested in the subjects,which he studied in class 12. So,help your children explore their interests by paying attention to their activities. Try to encourage them.If you can't,don't discourage them.

Its okay,if you take time to analyze your child's interest. Its not too late. Engineering in some random college with untrained professors and poor infrastructure is not the solution. Its okay if he gets admitted in a course in which he is interested after one year. (No,your relatives are not important than your child's future.)

If your son is clear of what he is interested in,then help him find the right place to study that particular subject. Give your kids the freedom to choose what they want to be. If your elder son/daughter is a software engineer and if he/she earns well,don't force your younger one also to follow the same path. Please understand money is not everything. 

Its completely fine if your son has flunked in the exams. This board exam alone cannot decide somebody's future. (sounds cliche but an absolute truth.) Spend more time with him. Talk to him. He may be interested in sports or any other activities. Figure that out. Encourage him.Give hope. Take a break and go for a vacation. Come back and think about reexamination. 

Don't waste your hard earned money in "buying" an engineering seat in some random 200th rank engineering college.No,its not worth it.

If your son has scored well in the exams,again you don't tell him what he should do.The kids who score well have too many options in front of them and let them decide what they want to be. Just because some colleague of yours said that the future lies in Electronics and communication science,don't compel them to study electronics.It makes no sense.  

Finally,there is nothing to panic about board exam results. Make your kids realize that you are always there for them,whatever be their board exam score. In some families, relatives are more curious to know your kid's score than you.Handle them carefully. Don't put your kids down in front of them. Remember your life should be filled with more happy moments.

Corn Methi Malai

                                     Corn Methi Malai 

Corn Methi Malai is basically a Punjabi dish.This goes well with roti,naan,paratha,pulav and even plain rice.
I love Onion pulav with Corn Methi Malai. Its an excellent combination.

I tasted this dish for the first time in a restaurant in Besant nagar,Chennai.Whenever I had time, I visited this place and ate corn methi malai. This particular restaurant also delivers food at door step.I used to give them a call and order corn methi malai and onion pulav. I used to do this at least twice a week..

When I had to quit my job and come back to my native, I knew that I was going to miss my favorite Corn methi malai and onion pulav combo.

 I also knew I can't live without this super yummy dish!!!(yes,am that addicted) . So,I decided to learn the recipe myself and started experimenting with corn and methi.

After so much of fine-tuning,I got the exact taste,for which I was longing for more than 2 months..(yes,you are right,I am a big foodie :D :D)

Love to share the secret with you..

To begin with, lets know the important benefits of the main ingredients used in this dish.

Methi Leaves : (Fenugreek leaves)

Methi leaves have so many  benefits. It helps in treating poor liver functions,helps in maintaining blood lipid levels and also helps in controlling glucose metabolism.(Keeps blood cholesterol level normal and helps in treating Diabetes in other words) .These leaves have strong aroma and these are bitter in taste. 

Corn :

Corn is high in fiber,low in fat and a great source of essential nutrients,offering an array of health benefits like preventing anemia,preventing Alzheimer's disease,lowering LDL cholesterol etc.



Okay!!
Lets check the ingredients!! - For 2 Persons

Boiled sweet corn                       - 1 cup
Methi leaves                               - 150 grams
Cashews                                     -1/2 cup
Almonds                                     - 1/2 cup
Onions                                        - 2 nos(Chopped)
Red Chilly Powder                      - 2 tea spoons 
Salt                                             - According to taste.
Ghee                                           - 3 teaspoons
Fresh Cream (Malai)                   - 1/2 cup

Recipe :

Soak the Methi leaves in salt water for about ten minutes.Wash the leaves thoroughly.(Just to kill all bacteria and other disease causing living organisms in the leaves).Now grind the leaves well and make a paste. Lets call this as" Methi paste". 

Take all the cashews,almonds,onions,red chilly,salt,fresh cream and mash thoroughly.Lets call this,"Onion paste". 

Now,turn on the stove.In a frying pan,add ghee.Once its heated,add the onion paste.After two minutes,add the methi paste. Saute well. Now add the boiled corn to the pan. Let the corn mix well with the gravy.
Finally,add fresh cream. 

 Note : 
  1. This dish can be prepared within 25 minutes of time.
  2. Don't add too much of fenugreek leaves as they have a bitter taste. 
  3. Substitute peas for corn,and you get Mutter(peas) methi malai(!!!) 
  4. You can add ginger-garlic paste if you want.But this results in usual kuruma's taste.
